I love the smell of fresh basil. One of my favorite ways to use basil is to make a batch of Pesto. Pesto is an extremely versatile dish. It can be a tasty sauce for whole grain pasta, spaghetti squash, or even brown rice. You can also mix it in a green salad as a substitute for dressing or use it as a dip.
2 tablespoons extra-virgin olive oil
3 cups packed fresh spinach or 2 cups frozen spinach, thawed and drained
1/2 cup packed fresh basil leaves
¼ cup chopped green onions
¼ cup pine nuts or walnuts
1 clove garlic, minced
1/4 teaspoon salt
Place ingredients in a food processor or blender until smooth. If pesto seems too thick, add a little hot water.
Yield: 6 servings (serving size: about 2 tablespoons)
