More than just lettuce

Salads should never be boring. It always pains me to order a salad at a restaurant, only to be served a bowl with mostly lettuce, a few chopped tomatoes, and shredded carrots. That’s not a salad! Although this salad is simple, it is more than just lettuce. Enjoy!

White Bean Salad

4 cups torn romaine lettuce, packed 
1 cup cannellini beans or great northern beans, rinsed and drained
1 cup chopped sugar snap peas
1 cup halved cherry or grape tomatoes
2 tablespoons chopped red onion
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley

Place lettuce in a large bowl, and add beans, sugar snap peas, tomatoes, onions, basil and parsley. Toss, and serve with choice of dressing.

  1. Is the salad dressing supposed to have apple cider vinegar in it? I tried it without and ended up adding a splash of vinegar to my salad. I made it a second time today and used equal parts vinegar and oil. That seemed to be ideal. Maybe it’s just a taste preference, but I wondered if you accidentally omitted the vinegar when you posted the recipe.

  2. Actually, no, I didn’t intend for apple cider vinegar to be used in the dressing, just olive oil. Technically, apple cider vinegar is not on the “Foods to Eat” list. The process of making apple cider vinegar often involves yeast and alcohol which are not allowed on the fast. However, since apple cider vinegar has so many nutritional benefits, may people choose to modify their fast by including it.

  3. I didn’t realize that. I should have researched the vinegar more before using it, but I guess it’s my heart that the Lord is looking at, so it’s not the end of the world. My husband and I have both had organic apple cider vinegar on our salads over the past couple weeks.

  5. I’ve been using this dressing recipe and the white bean salad. I’ve eaten it several times, and I LOVE it! The salad is amazingly filling, and oh so good! I will actually continue to use these recipes beyond my fast. I don’t think I’ll ever buy Italian dressing again! Thank you so much for your recipes. Your site is what made me decide that I could do a true Daniel fast!
