Ingredients
  

  • 2 cups chopped fresh spinach
  • 2/3 cup canned chickpeas, rinsed and drained
  • 1/2 cup chopped carrots
  • 1/2 cup chopped sugar snap peas
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped zucchini
  • 1 tablespoon sunflower seeds

Instructions
 

  • Place spinach, chickpeas, carrots, sugar snap peas, tomatoes, and zucchini in a large bowl. Pour Lemon-Tahini Salad Dressing over salad, and stir to coat. Sprinkle sunflower seeds, and toss gently.
  • Yield: 4 servings (serving size: about 1 cup)
