Banana-Coconut Ice Cream

I grew up in a family that considers ice cream to be a necessary food group, so you can understand why it's one of my weaknesses. As I've gotten older, though, I simply don't (and can't) indulge as often as I did in the past. I've found a way to enjoy this tasty treat without all the sugar and empty calories. This recipe is a breeze to make and completely Daniel Fast friendly. It's especially wonderful on a hot, summer day, but, honestly, it will work just fine ANY time of the year.

Ingredients
  

  • 2 14-ounce cans coconut milk
  • 2 bananas, peeled, sliced
  • ¼ cup Date Honey (or 6-7 soaked dates, drained)

Instructions
 

  • Place ingredients in a food processor or blender. Mix until smooth. Place in a covered glass bowl in freezer 5-6 hours or until firm (but not solid). If the mixture gets too hard, set it out on the kitchen counter to thaw until soft enough to serve.
  • Yield: 12 servings (serving size: 1/2 cup)

Notes

  • If using whole dates instead of Date Honey, soak dates in ¼ cup water. Let sit at room temperature 2 hours or until softened. Drain water and place dates in food processor with coconut milk and bananas. Process until smooth, and freeze.
  • To add a strawberry flavor, mix in 2 cups sliced strawberries.

Hi Kristen! Our congregation will be ending our 21-day Daniel fast in two days. We have discovered cocoanut flour. I have made oat flour and mixed them together to make a muffin. We love the date honey and I have fallen in love with grape seed oil. Have we ruined our fast using the cocoanut flour. We also sauté collard greens and kale with onion ns, garlic and grape seed oil. Amazing spiritual changes our lives and intensified prayer.

The Lord has been working in mighty ways as you’ve humbled yourselves before Him. If you’ve used coconut flour, it’s OK. Coconut flour is allowed on the fast. 🙂 May God continue to fill you with His power and peace as you trust in Him!

Hi, Thank you for this website! It’s very helpful. My question is, I’m allergic to coconut, is there a substitute I can use for this recipe?

Hi, Nicole! You’re welcome! 🙂 Although I’ve never tried it, you could try using unsweetened almond milk as a substitution. It’s not as thick as coconut milk, so the texture will be slightly different. But, I think almond milk might work. If you try it, let me know!

Hi just a tip.. using frozen bananas and making sure the coconut milk is cold makes the freezing go a lot faster. I have made similar recipes where I was able to eat it immediately after making since the ingredients were frozen!

I hope this doesn’t sound silly but we are trying to do the Daniel fast on a tight budget and have some stuff already but I see that date honey is used in at least a few different recipes – is regular honey considered a “choice food” so off limits? If not would that work in this and other recipes?

Hi! If you click on the link for Date Honey, you will see that it’s made of dates mixed with water. So it’s completely Daniel Fast friendly! Added sugars (such as honey, molasses, agave nectar, etc.) are restricted on the fast, but fruit is allowed.

Hi Kristen,

I am doing well on the Daniel Fast. God is so Good! My only concern is that my diet may be severely lacking in protein. Are beans/Rice the only source of protein?

Hi, Jo! I’m so glad to hear you’re seeking the Lord through prayer and fasting. There are many sources of protein on the Daniel Fast. In addition to the beans and rice combination, there are other good sources of protein, such as legumes, nuts, seeds, and quinoa. Even though you’re not having animal protein, you’re still getting good protein from the foods you ARE eating. Thanks for your question!

Good Morning Ms. Feola,

I just found your website. I am thrilled to use it. I started the Daniel Fast on Ash Wednesday, but need lots of options and recipes. I have been doing curry potatoes and roti. I find the cravings are starting to come in now. I need to curb my fruit intake because of the high sugar content. I thank you for this website.

What about coconut sugar or coconut syrup on the Daniel fast

Hi, Steve. Your question is a good one…and a tricky one! Coconut is allowed on the fast. However, added sugar is not. So whether you include coconut sugar or syrup on the fast depends upon how you view it (as a fruit product or added sugar). It’s really a matter of personal conviction. I do not include coconut sugar or syrup in my recipes, but that’s my personal choice. If you’re not sure what to do, ask God to give you wisdom as to what YOUR fast should look like. I hope this helps!

I made this and the flavor was amazing. One question, though: It turned into a solid brick and I had to pretty much use an icepick to break it up! Any suggestions to prevent that?

So sorry for the delay in responding. My grandpa passed away last week, so I wasn’t on the computer much. Once it’s frozen, you should leave it out on the counter to thaw a little before serving. That will give it an ice cream-like consistency. I should probably add that note to the recipe to clarify. Thanks for your question!

Hi was just wondering about the coconut milk? Is this just the normal coconut milk found on the shop shelves? I just assumed to not use because it had added stabilizers etc

The goal on the Daniel Fast is eat as simply and “cleanly” as possible. Ideally, we would only take in fresh produce and not use frozen or canned ingredients. However, that’s not realistic for most people. Therefore, you will find some recipes which do contain canned foods, some of which contain additives. Coconut milk is one of them. This is one of those areas where it becomes a matter of personal conviction whether or not you include it in your fast. Thanks for your question!

I tried this recipe and it has a nice taste. I added some strawberries as I’m not too thrilled about banana flavored anything 🙂 It was more ice and than cream. I think I’ll next time I’ll put them in cups with popsicle sticks

Do you think I could make it pistachio flavored or might that interfere with the coconut? I adore pistachio ice cream! I was thinking of just grinding up some pistachios and adding them to the mixture.

can you place almonds in the blender. can you also place agava as the honey dates to get the sweetness

Yes, a high-powered blender can chop nuts with no problem. Agave nectar is not a part of the Daniel Fast. It’s an added sugar, along with honey, molasses, etc. so it should be avoided. Thanks for your question!

You could try it. The coconut milk works well because of the fat content. The almond milk might be more “ice” than “cream.” Let me know if you try it!

Hi, Regina! Yes, you are allowed to use coconut milk on the fast, as long as it’s unsweetened. Several of my recipes feature coconut milk. As far as a beverage, your primary drink should be water. It’s important to drink plenty because you’re taking in so much fiber! Thanks for your question and for visiting my website. May the Lord bless you as you hunger for Him!

When I haven’t had dates, I’ve used dried plums (prunes). Not as sweet, but it works! Also, you could do dried figs or apricots.

Hi, Bill. Good question. No added sugars are allowed on the Daniel Fast, including honey, agave nectar, molasses, maple syrup, and artificial sweeteners.

Ok thank you, I bought unsweetened apple juice yesterday and when I got home realized it had sugar in it. Assuming it is natural juice. Is that correct?

If the label says, “unsweetened,” then it probably doesn’t contain ADDED sugar. Naturally-occurring sugar that occurs in food is fine. The way to check is to take a look at the ingredients list. If it doesn’t have “sugar” (or any form of it, such as brown rice syrup, honey, molasses, agave nectar, or artificial sweeteners), then it’s Daniel Fast friendly. 🙂

I used this great recipe but varied it a little. I did make and use the date honey, but I also added only 1 can of coconut milk and substituted about 1 cup (plus 1 TBS) of pure pineapple juice in place of that second can. I also added strawberries. It was FABULOUS!! My 8 year old won’t quit eating it!! He said that he can’t even tell there’s no sugar. SCORE!
