Black Bean Stir-fry w/ Corn Chips

Black Bean Stir-fry 

This stir-fry is perfect for a weeknight meal, especially if you're tired from a long day at work and you want something that doesn't require a lot of prep or time.

Ingredients
  

  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup sliced onion
  • 1 15-ounce can black beans, rinsed & drained
  • 1 14 1/2-ounce can diced tomatoes, undrained
  • 1 cup canned corn, drained drained
  • 1/4 cup diced green pepper
  • 1/4 cup diced red pepper
  • 1 clove garlic
  • 2 tablespoon lime juice
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • Garnishes: Diced avocado and diced green onions

Instructions
 

  • Heat olive oil in a large skillet over medium-low heat. Cook onions until slightly blackened and crispy.
  • Add black beans, tomatoes, corn, peppers, garlic, lime juice, cumin, salt, and pepper. Simmer 15-20 minutes. To serve, top with diced avocado and green onions.

Notes

To add a little more protein to this dish, mix in cubed Marinated Tofu.

I just want to say I absolutely love this recipe. I am not fasting at this time but made the recipe for my daughter and her finance and they loved it as much as I did. Thank you so very much. God Bless

Oh. My. Goodness! Yumminess for dinner!! My 8 and 5 yr olds devoured it. 🙂 I did use fresh tomatoes instead of canned with the juices. For some reason they won’t eat stuff with a ‘red sauce’. day one fast ended with a delicious dinner. In fact, it’s now added to our regular everyday menus. Mmmmmmmmmmm

This recipe was delightful although I left out the tomatoe sauce and put fresh salsa on top. I served it with quinoa. Even my kids loved it.

Is there any other way to marinate tofu? I will be doing this fast soon so I am trying to get my recipe list together.

Yes, there are probably many different ways you can do it. I just gave one example for you to try. But, you can certainly use another recipe (as long as it’s Daniel Fast friendly, of course!). 🙂

Okay. Thanks for the response. I did notice that the liquid aminos have just water and soy as ingredients so maybe that is an option.

Jenny, that’s a great question. In fact, I had to look at my soy sauce label to see all the ingredients. I had forgotten that it does contain wheat (not whole wheat, which is allowed) and The goal of the Daniel Fast is to eat as purely as possible, choosing foods that God created and eliminating man-made, chemically processed foods. Kikkoman, the brand I have at home, does not list alchohol as an ingredient. However, it does contain sodium benzoate, which is a preservative.

Thanks for challenging me with this one. I am going to alter my recipes a little. Technically, soy sauce would NOT be allowed, but sometimes people choose to modify their Daniel Fast and give themselves a little latitude. Whatever you feel the Lord is leading you to do on this fast, do it…soy sauce or not. 🙂

You can sub out the Soy Sauce with Aminos by Braggs. I tasted the same but is made from plants. I normally purchase it in the health food section at the Kroger grocery store.

Yes, Bragg’s Liquid Aminos is an option. Another substitute is Coconut Aminos.

I have a question about Soy Sauce. Doesn’t it contain wheat and alcohol? Does this follow the Daniel Fast? Thanks!

This black-bean avocado dish was indeed great! (Although I did have to put in some black beans — they weren’t listed on the recipe list but I figured out they should be in the dish since they’re in the name of it and in the picture! lol) The pictures of the different dishes are helpful, too.
