Vegetable Bean Soup
A soup that's hearty and filling, plus it provides a nice amount of protein and fiber.
Ingredients
- 1 tablespoon extra-virgin olive oil
- ½ cup chopped onion
- ½ cup chopped carrots
- ½ cup chopped celery
- 1 clove garlic, minced
- 6 cups water
- 1 8-ounce can tomato sauce
- 1 14.5-ounce can light red kidney beans, rinsed and drained
- 1 15-ounce can black-eyed peas, rinsed and drained
- 1 14.5-ounce can French-style green beans, drained
- 1 cup chopped yellow summer squash, unpeeled
- ½ tablespoon chili powder
- 1 bay leaf
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil over medium heat in a large saucepan. Add onions, carrots, and celery. Cook until vegetables are softened. Add garlic, and cook for 1 minute, stirring constantly so garlic doesn’t burn.
- Pour in water and all remaining ingredients. Bring to a boil, and then lower heat. Simmer, uncovered, 30 minutes. Discard bay leaf and stir in parsley before serving.
- Yield: 8 servings (serving size: about 1 ¼ cups)
Notes
- Use 2 cups chopped fresh haricots vert beans instead of canned green beans. Haricot vert beans resemble regular green beans. However, they are a bit more slender and long , and they are also stringless (a nice benefit). When lightly cooked, haricot verts are tender, crispy, and very tasty, with a hint of sweetness.
I just made this soup and it is delicious. I am going to start making more meals from the Daniel Fast so we can eat healthier. I am hoping my cholesterol will get back to normal. Also, my arthritis.

Yes.
Made this soup today minus the squash. I added a can of black beans (love them). I also added a diced jalepeno pepper for a little kick. Awesome! Very good soup!

what about pasta ?
Hi, Maxine! You can use whole grain pasta on the Daniel Fast. Just check the ingredients list to make sure the product is whole grain. Thanks for your question!
Can white soup beans be used instead of kidney beans ?

Can I fry onions in Daniel fast using vegetable oil?
Hi. Good question. Deep-fried cooking is not a part of the Daniel Fast. However, you can lightly saute foods in oil.
Love all the recipes, have made taco and vegetable soup and 2 bean burgers. Family has loved all the different ways of eating during a fast and have learned a lot of what is really healthy.I believe we couldn’t have done it without your site.

Excellent soup! I also added 1 cup of corn, and can of tomato soup in exchange for one of the cups of water.

I made this tonight for dinner, and it was very good. Even better then I thought it would be. So very flavorful. I will admit I thought it might be bland, especially with the water being used instead of chicken or vegetable broth, but I did not miss broth at all, and that really helped to keep the sodium down. My husband and son really liked it too, and they can be hard to please when I make something healthy. Thanks for the recipe, I will use it again, often.
