Green Bean Casserole

Without any sort of a plan when on the Daniel Fast, you can easily get overwhelmed by the food guidelines. Some people, for the sake of simplicity, resort to eating the same foods over and over again. That's one of the reasons I wrote my book, The Ultimate Guide to the Daniel Fast. I wanted not only to provide spiritual encouragement and guidance for the fast but also to equip people with great-tasting recipes. My book and website contain hundreds of dishes that many people choose to enjoy even when they're not on the Daniel Fast! In this recipe, brown rice is combined with lentils, which forms a complete protein (all the essential amino acids are present in the proper amounts). It's important to choose dishes such as this one to ensure you're taking in adequate amounts of this necessary nutrient.

Ingredients
  

  • 1 cup brown rice
  • 4 cups water, divided
  • ½ cup lentils, rinsed and sorted
  • 3 cups fresh or frozen green beans, cut into 1-inch pieces
  • 1 14.5-ounce can diced tomatoes
  • 1/2 cup chopped red onion
  • 2 cloves garlic, minced
  • 2 teaspoons dried basil
  • 1/2 teaspoon salt

Instructions
 

  • Preheat oven to 350 degrees. Combine cooked rice, cooked lentils, green beans, tomatoes, onions, garlic, basil, and salt. Stir well, and then transfer to a a 9 x 13-inch casserole dish. Bake 30 minutes.
  • Yield: 8 servings (serving size: about 1 cup)

Notes

  • If using fresh green beans, steam or boil them for 15 to 20 minutes before baking.

Am I missing something? When do the lentils get mixed in? Are they baked with everything else, or are you putting the casserole on top of lentils? Thanks!

Prayers Answered! Thank God For You Ms. Kristen! I was Praying for God to show me the the way to take better care of my health. I’m 55 yrs old and It seems as though my body just want to fall apart. I was over weight and feeling miserable. My mind, body and soul just was not right. My pastor suggested and introduced the Daniel Fast. For the restoration of the body and constant Bible study for a closer walk and understanding of God’s word for my Life.
It’s Working!!!

This Recipe Is great. My Mother, sister and I Loved It. It give you pretty much all of your essential vitamins and taste great too. I’ve made several of your recipes and so far I haven’t went wrong with either!

I will be commenting on all of your recipes that I have had the pleasure of feasting on!

Are there any of your other recipes you pair with this dish? I want to make sure I’m making full meals so that we’re not hungry again an hour or two after eating. Thanks.

You could have soup or salad. For Soup, I recommend pairing this dish with Chunky Potato Soup (http://www.ultimatedanielfast.com/one-potato-two/), Corn Chowder (http://www.ultimatedanielfast.com/delicious-and-easy-to-make/), or Black Bean Minestrone (http://www.ultimatedanielfast.com/day-2-its-chilly-so-make-some-chili-or-soup/). Salad suggestions are: Mega Greek Salad (you could add nuts to the salad for extra protein) or Fig, Pear, and Walnut Salad (http://www.ultimatedanielfast.com/as-close-to-candy-as-you-can-get/). Having meals that are high in protein will help with that feeling of fullness, so try to focus on recipes that contain beans (beans and rice together make a complete protein), lentils, nuts, and seeds.
