Date Honey

There's a reason why dates are mentioned in the Bible. You'll see what I mean after you try this recipe. It's an unbelievable treat that will make your mouth dance with delight! Date Honey is featured in many Ultimate Daniel Fast recipes, so you'll definitely want make a batch when you begin your three-week journey.

Ingredients
  

  • 1 cup pitted dates (about 6-8 Medjool or 18-20 Deglet Noor)
  • 1 cup water
  • ½ teaspoon cinnamon

Instructions
 

  • Pour dates and water into a small saucepan, making sure dates are completely covered (add additional water if necessary). Bring to a boil over high heat. Reduce heat to low and simmer 45-60 minutes or until dates are very soft and broken down. Remove from heat, and allow to cool slightly for about 15 minutes. Pour mixture (including liquid) into a blender or food processor and puree until completely smooth. Sprinkle in cinnamon and stir well. Store in a sealed container in refrigerator.
  • Yield: 12 servings (serving size: about 1 tablespoon)

Notes

  • Following are three of the most popular dates: a) Medjool - largest, sweetest date that is soft and tender, 2) Deglet Noor - semi-dry chewy "bread" date with a nutty flavor; not as sweet as other dates; smaller than the Medjool, and 3) Pakistani - semi-dry date that is very similar to the Deglet Noor, but is slightly smaller.
  • Toppings: Finely chopped pecans or walnuts and unsweetened shredded coconut.
  • Spread Date Honey on one side of each apple slice. Serve as is, or press into chopped pecans or shredded coconut or both.
  • You may also use sliced bananas or pears.

Creamy Mango Delight

With several inches of snow on the ground and a wind chill around -25° F, I am dreaming of lying on the beach under the warm summer sun. Instead of feeling the sand between my toes and the summer breeze blowing gently across my face, I'm getting blasted by the bitterly cold wind gusts. Aaah, but today the refreshing Creamy Mango Delight is my escape, sweeping me away to a tropical paradise...if only for just a few minutes.

Ingredients
  

  • 1/2 large mango, peeled
  • 2 apples, unpeeled
  • 1/2 cup fresh pineapple, cut into chunks
  • 1 kiwifruit, unpeeled

Instructions
 

  • Wash produce well. Feed into juicer and discard pulp.
  • Yield: 1 serving (serving size: 1 cup or 8 ounces)

Notes

  • To convert this juice recipe into a smoothie, peel fruit, add 1 1/2 cups almond milk or rice milk, and put into a blender until smooth. Add ice, and blend again to thicken.

These delicious pies are made with nothing more than dates and pecans. The result is a treat that tastes amazingly like pecan pie. Even if you're not a big fan of pecan pie, give these goodies a try.

Ingredients
  

  • 8 Medjool dates
  • 8 pecan halves

Instructions
 

  • Remove pits from dates, and stuff one pecan half into each date.
  • Yield: 4 servings (serving size: 2 pies)

Notes

  • Medjool dates are the largest variety and work best with pecan halves. If you use smaller pecan pieces, you could use the smaller Deglet Noor dates instead.

 

Hummus

Hummus

Hummus is a staple when I'm on a Daniel Fast. I like to use it with fresh vegetables and as a spread on Ultimate Nut and Seed Crackers. But you can enjoy Hummus in dozens of other ways, too (see Recipe Notes for ideas).

Ingredients
  

  • 1 15-ounce can chickpeas, rinsed and drained
  • 1/4 cup tahini
  • 1/4 cup water
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, packed
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin

Instructions
 

  • Place ingredients in a food processor or blender. Process, scraping sides of bowl often, until mixture is a smooth paste. You can either refrigerate at this point, or serve immediately.
  • Yield: 8 servings (serving size: about 1/4 cup)

Notes

  • Hummus has more flavor after it has been refrigerated at least 24 hours before serving.
  • Prepare large quantities of hummus at one time. It can be refrigerated up to a week and frozen up to 3 months.
  • Use as a dip for fresh vegetables.
  • Substitute black beans for the chickpeas or use 1/2 can of each.
  • Spread on fresh tomato slices or on a Whole Grain Tortilla.
  • Other hummus recipes to try: Confetti Hummus, Pumpkin Hummus, Hummus Casserole.
  • Goes well with Romaine Wraps.

Coming up with snack ideas on the Daniel Fast can present quite a challenge, especially when everything you'd normally munch on falls in the "Foods to Avoid" category. One of the tried-and-true recipes for healthy snacking is the classic Trail Mix--a tasty, satisfying snack that will give you energy between meals, help curb your appetite, and give you that mid-morning or mid-afternoon boost.
Trail Mix travels well, too. Just scoop some out into a plastic bag. Take it with you to work, school, or whenever you're on the road. That way you won't be tempted to head to the nearest fast food drive-thru when your stomach is growling for a snack.

Ingredients
  

  • 1 cup whole raw almonds
  • 1 cup cashew halves & pieces
  • 1 cup walnut halves
  • 1/2 cup golden raisins
  • 1/2 cup raisins
  • 1/4 cup raw sunflower seed kernels
  • 1/4 cup raw pumpkin seeds (pepitas)

Instructions
 

  • Mix ingredients together, and store in an airtight container for 2 weeks at room temperature or 1 month in refrigerator.
  • Yield: 12 servings (serving size: about 1/4 cup)

Notes

  • Use as a topping for fresh fruit.
  • Serve with unsweetened almond  milk for a quick breakfast dish.
  • Other dried fruit options are apricots, bananas, blueberries, dates, or figs.
  • Add unsweetened coconut flakes.
  • Substitute raw almonds with Cinnamon Roasted Almonds.
  • Mix with Gimme More Granola.

Almonds are naturally sweet, and when you add a little cinnamon AND roast them . . well, let's just say you definitely can't eat just one.

Ingredients
  

  • 2 cups whole almonds
  • 1/2 tablespoon extra-virgin olive oil
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions
 

  • Preheat oven to 250 degrees. Line an 11 x 17-inch baking sheet with parchment paper or lightly rub with olive oil and set aside. You can also use a silicone mat.
  • Put almonds in a large bowl, add olive oil and stir well. Sprinkle in cinnamon and salt and toss to coat. Spread almonds evenly on baking sheet. Bake 1 hour, stirring occasionally. Cool and serve or store in an airtight container.
  • Yield: 8 servings (serving size: about ¼ cup)

Notes

  • Add to Gimme More Granola.
  • Use in Trail Mix.
  • Chop almonds and sprinkle on Cinnamon Baked Apples.

  • 1 1/2 cups yellow cornmeal
  • 1/2 cup unsweetened almond or rice milk
  • 1/4 cup water
  • 1 tablespoon Date Honey
  • 1 tablespoon extra-virgin olive oil
  • 3/4 cup fresh or frozen corn kernels
  • 1/4 cup chopped green onions, green parts only
  • 1/2 teaspoon salt

Instructions
 

  • Preheat oven to 400 degrees. Mix cornmeal, almond milk, water, Date Honey, and olive oil in a medium bowl. Stir until smooth.
  • Add corn, green onions, and salt. Stir until well combined. Lightly rub a mini-muffin tin with olive oil. Fill all 24 cups about 3/4 full. Bake 15 minutes. If using a regular muffin tin, fill all 12 cups about 3/4 full and bake 20 minutes.
  • Yield: 12 servings (serving size: 2 mini-muffins or 1 regular muffin)

Notes

  • Use 1 1/2 tablespoons dried chives instead of green onions.

Gimme More Granola is truly the perfect healthy snack because it's easy to make and packed with fiber, protein, vitamins, and minerals. This recipe is also filling and satisfying. A little goes a long way.

Ingredients
  

  • 1/4 cup chopped dried plums or Medjool dates
  • 1/4 cup water
  • 1 cup old-fashioned rolled oats
  • 2 tablespoons unsweetened apple juice
  • 1 tablespoon extra-virgin olive oil
  • 1/4 cup raisins
  • 2 tablespoons chopped almonds
  • 2 tablespoons chopped walnuts
  • 2 tablespoons sunflower seeds
  • 2 tablespoons unsweetened shredded coconut

Instructions
 

  • Preheat oven to 350º F. In a small saucepan, add plums and water. Cook over medium heat 5 minutes, or until plums are softened. Transfer to a food processor or blender, and process until mixture is a thick paste.
  • In a large bowl, combine plum mixture, apple juice, olive oil, oats, raisins, almonds, walnuts, sunflower seeds, and coconut. Stir well, making sure everything is well coated. Spread out on a baking sheet, and bake 5 minutes.
  • Stir granola, and bake another 5 minutes, or until lightly browned. Let cool (will become more crispy as it cools), and store in an airtight container.
  • Yield: 8 servings (serving size: about 1/4 cup)

Notes

  • Sprinkle on top of Chai Chia Pudding, Baked Acorn Squash with Apples, or Nutty Fruit Cereal.
  • Add to Cinnamon Roasted Almonds or Trail Mix.

Fruit Pizza

This recipe is great for breakfast, snack, or dessert. It's one of my favorites!

Ingredients
  

Crust

  • 1 ½ cups almond flour or meal
  • ½ cup roughly chopped pitted dates
  • ½ cup chopped pecans
  • ¼ cup unsweetened apple juice

Fruit Sauce

  • ¼ cup Date Honey
  • ½ cup sliced strawberries

Topping Ideas

  • Sliced apples, bananas, blueberries, grapes, kiwifruit, mangoes, oranges, peaches, pineapples, strawberries

Instructions
 

  • Preheat oven to 350 degrees. Place almond flour, dates, pecans and apple juice in a food processor. Process until mixture forms a ball.
  • Press dough into 10-inch circle, about ¼-inch thick, on an 11 x 17-inch baking sheet or pizza pan (rub a little olive oil on your hands if dough gets too sticky; you can also place a sheet of parchment paper on top of the dough). With a fork, poke holes all across crust dough. Bake 10 minutes, or until edges are browned and slightly crispy. Remove from oven and let cool completely, about 45 minutes.
  • Put Date Honey and strawberries in a food processor or blender. Process about 30 seconds or until smooth and creamy. Spread fruit sauce onto cooled crust. Top with your favorite assortment of sliced fruit. Refrigerate 3 hours or until chilled.
  • Yield: 8 servings (serving size: 1 slice)

Notes

  • Substitute oat flour for the almond flour.

Ingredients
  

  • 2 15-ounce cans chickpeas, rinsed and drained
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon crushed rosemary
  • 1/2 teaspoon salt

Instructions
 

  • Preheat oven to 350 degrees. Lightly rub or spray a baking sheet with olive oil. Spread chickpeas out in a single layer on the sheet.
  • Roast about 20 minutes, or until chickpeas are dry to the touch. Remove from oven, and increase temperature to 425 degrees (double-roasting the chickpeas gives them a crunchy texture). Place chickpeas in a large bowl. Pour in olive oil, and stir to coat. Add garlic powder, onion powder, rosemary, and salt. Stir again.
  • Place chickpeas back on the baking sheet. Roast another 15-20 minutes, or until crispy and lightly browned. Let cool completely before serving or storing at room temperature.
  • Yield: 8 servings (serving size: about 1/4 cup)

Notes

  • Use as a crunchy topping for Mega Greek Salad, Spinach Salad, or Quinoa Salad.

Oatmeal Raisin Cookies

A Daniel Fast favorite. Oatmeal Raisin Cookies are moist and chewy, so good you almost can't believe they're allowed.

Ingredients
  

  • 1 cup old-fashioned rolled oats
  • 1 cup almond flour or oat flour
  • 1 cup creamy cashew butter, almond butter, or peanut butter
  • 1/2 cup unsweetened applesauce
  • 1/3 cup Date Honey
  • 1/2 cup raisins
  • 2 tablespoons chopped walnuts
  • 1 teaspoon cinnamon

Instructions
 

  • Preheat oven to 350 degrees. Prepare an 11 x 17-inch baking sheet by lining with a silicon mat. Mix oats, almond flour, cashew butter, applesauce, and Date Honey in a large bowl until well combined. Add raisins, walnuts, and cinnamon. Stir well. Drop by spoonfuls, two inches apart, on baking sheet. Flatten and shape into circles. Bake 10-12 minutes.
  • Yield: 18-20 servings (serving size: 1 cookie)

Notes

  • Make your own oat flour by placing old-fashioned rolled oats in a food processor or blender and process until fine (1 cup old-fashioned oats will yield about 3/4 cup ground oats).
  • Increase applesauce to 1 cup if you don't use Date Honey.

 

Almond Butter Bites

Almond Butter Bites

Easy to make, these little snacks are big on taste. Pop one in your mouth for a quick snack, or treat yourself to a bite or two after dinner.

Ingredients
  

  • ½ cup almond butter
  • ¼ cup raw sunflower seeds
  • ¼ cup raisins
  • ¼ cup chopped almonds
  • 2 tablespoons unsweetened shredded coconut
  • ¼ teaspoon cinnamon

Instructions
 

  • Mix all ingredients in a bowl until well combined. Use a 1/2 tablespoon measuring spoon or a large melon ball scoop to form mixture into small balls. Place in an 8 by 8-inch baking dish, and freeze until firm. Serve frozen or just slightly thawed.
  • Yield: 6-8 servings (serving size: 2-3 balls)
